Naturally rich in Polyphenols, particularly Hydroxytyrosol, our organic EVOO of superior quality is produced only from our own Organic Family Farms. Because of the harsh environment of the desert (127°F during summer, rocky soil, roots cannot develop easily, lack of water), the olive trees are so stressed that a phenomenon of panic (survival instinct) occurs. This causes the olive trees to produce a huge quantity of polyphenols (antioxidants) to survive. The resulting olive oil contains an extraordinary hydroxytyrosol value.

Morocco, a difficult but special land, gives birth to our oil. We plant olive groves, and sustainable development passes through the protection of the environment and people. Growing the right cultivar in an unspoiled environment allows us to get excellent olive oil. Our mechanized processes and first cold pressing result in an Ultra-Premium Organic EVOO, Desert Miracle.

Desert Miracle is an organic olive oil made from Dahbia (Moroccan variety) and Arbequina (Spanish variety) cultivars. The production area is the ElBorouj region, with an olive grove surface of 200 Hectares – 495 acres, at an altitude of 340 meters over the sea level. The soil properties are 25% clay, 30% muddy/loamy, and 45% sandy, with an overall frank and light soil aerated by a multitude of calcareous rocks of various sizes (soil pH: 8.20). The olive trees are cut into cups or hedges, with a density of 1,852 trees/Ha.

The production of Desert Miracle yields 330,000 liters of extra virgin olive oil with 0.2° maximum acidity when bottled. The harvest time is from the end of September to the end of December, and the extraction is done through a 2 phases continuous system, with a first cold pressed method at a maximum of 26°C. The yield ranges between 11.0% to 14%.
